I would like to share my all time favorite easy dessert recipe. I have been making these and sharing the recipe for over 25 years! The original recipe was invented by my cousin Molly. Until now, I have never written it down…
1 box extra fudge brownie mix – will need 1/3 cup oil, 1 egg, and 1/4 cup water
1 bag of chocolate chips
2-4 cups of Rice Krispies
1 bag mini marshmallows
1/4 cup peanut butter
1 tbsp butter
Make the brownies as directed, but place batter in a 9 X 13 deep dish. Bake for 1/2 the time indicated on the box, about 20 min, until almost done. Top the brownies with the mini marshmallows, put back in oven for 2-5 minutes. Let the marshmallows puff up and get melty. Leave to cool.
While the brownies with the melted marshmallows are cooling, start the top layer. Place butter, chocolate chips, and peanut butter in a sauce pan on low and stir gently. (I start with the butter and chocolate chips, then add peanut butter to taste). Once melted and smooth, add the Rice Krispies, 2-4 cups (more krispies = more crunch; less krispies = denser chocolate top layer).
To finish, gently plop the chocolate onto the brownies, in sections, so as not to flatten the marshmallows. Then spread until the marshmallows are covered with the chocolate – peanut butter – crunchy goodness.
Cool in the fridge overnight, or at least 3 hours before serving. Cut into 2 inch squares and plate them for a party or for a potluck.
